SØLE BAR+BOTTLE seeks to create an experience that pushes the boundaries of what a high-end beer bar can be. Situated in a 200 year old historic building in the heart of Easton's vibrant downtown, Bar+Bottle blends modern & rustic with 16 rotating taps featuring Søle's own mainstays and one-off creations, as well as collaborations and rarities sent from our brewing friends around the world. Two very different aesthetics collide within this beer mecca with a split-personality.

"BAR" features exposed brick, warm lighting, outdoor seating, a 30ft bar, and large group nooks along the interior of the newly constructed glass facade that invokes the feeling of being outside while inside. 

"BOTTLE" shows off a dedicated growler / crowler / takeout bar without any seats to ensures expedience when getting beer to go, and features merchandise, bottle, and can sales when stock is available. The ambiance is lighter and airier, and features  high-top cafe style seating, and tiny private nooks that overlooks the Delaware riverfront and the "Free Bridge" into NJ, perfect for evening computer work or stealing away with a pint and a good book.

SØLE WORLD HQ is our dream-brewery and beer playground. Occupying a 7,000 sq.ft turn-of-the-century warehouse space at the historic Simon Silk Mill, we have plenty of space to create a new type of brewery experience seldom seen.

WORLD HQ will feature our flagship 4-vessel 15bbl fully custom brewhouse optimized to create heavy handed IPA's as well as complex turbid mashing necessary to create authentic Lambic-style and spontaneously fermented wild ales. The space will be complete with a canning line, koelschip, 30bbl foudres, 3,000 sq.ft of barrel cellaring, 7 Steel "wild" tanks, and a mixed fermentation beer bottling line.
